How To Make Homemade Pasta

My Name is Chef Mario and welcome to my new blog. I’ve been in the industry for some time about 17 years and counting. I also attended The Art Institute of Los Angeles located in Santa Monica C.A. I received my B.A. of science in 2006 and have worked for such companies as Disney, Yardhouse, and Cheesecake to name a few.

I love what I do, and you can tell by the food I create.

I love to cook with my kids. You noticed I said kids…. I have 4 kids, two boys and two girls. I have a daughter with special needs and a very picky eater. My wife is my biggest critic and will tell me like it is. Now that you know a little about me lets get to today's lesson. Homemade Pasta…

​Tools that you will need. A rolling pin, cutting board, plastic wrap, and a knife. If you do not have a rolling pin you can use a can of aerosol oil. Just long enough to roll. If you do use the aerosol, make sure to wrap it in plastic wrap.

Ingredients as follows:

  • 2 cups of all-purpose flour
  • 3 tablespoons of oil (EVOO is fine)
  • ½ teaspoon of salt
  • ¾ cup of water
  • 3 whole eggs lightly beaten
  • Extra flour for rolling

Place all ingredients in a bowl except water. Slowly add water till incorporated. Knead the dough until it comes together. It should look smooth and slightly round. I would say about 6 minutes of kneading. When done add a little flour to it and wrap in plastic. Let sit in the refrigerator for about 30 minutes. Take out of fridge and cut into 6 even pieces. Roll each piece into a ball set aside. Take one roll and flour cutting board. Roll until pasta is a sheet. Thin so that you can see your hand through it. Long ways fold pasta 3 times. With your knife cut into ½ inch cuts. When finish add flour and with your fingers fluff the pasta. Place onto sheet pan and when finish place in fridge till time to cook...

Pasta water should be boiling rapidly and add salt. The water should taste like the sea…. Dunk pasta into the boiling water and with tongs swirl pasta so it does not stick. Fresh pasta should only take 3 minutes tops to cook. Have your favorite sauce ready and Bon Appetit. Remember the most important thing when cooking. If you’re not smiling you’re not doing it right.
